Cauliflower Crust Pizza

INGREDIENTS

  • 1 medium head of cauliflower

  • ¼ teaspoon kosher salt

  • 2 drops Basil Vitality™

  • ½ teaspoon dried oregano

  • ½ teaspoon garlic powder

  • ¼ cup parmesan cheese

  • ¼ cup mozzarella cheese (or vegan / dairy substitute!)

  • 1 egg, whipped

  • Pizza sauce

  • Desired toppings

INSTRUCTIONS 

  • Preheat oven to 450°F.

  • Wash the head of cauliflower and break off all florets.

  • Grind in a food processor until texture becomes rice-like.

  • Place on parchment paper on a baking sheet and roast for 5–8 minutes, watching carefully. You don’t want the cauliflower to brown, just to become soft.

  • Remove from oven and let cool for 5 minutes.

  • Combine cauliflower in a bowl with all the other ingredients. Clean hands mix the best!

  • Place parchment paper on baking sheet and oil it.

  • Pat down the cauliflower mixture until a flat circle.

  • Bake for 8–10 minutes or until golden.

  • Remove from oven and cool.

  • Once cool, evenly spread sauce over dough.

  • Add desired toppings.

  • Cook for 15-20 minutes.

BONUS: For essential oil-infused pizza sauce, blend: 1/3 cup sundried tomatoes, 2 minced garlic cloves, 1/3 cup extra virgin olive oil, 1 medium tomato halved, 2 drops Oregano Vitality™, 2 drops Basil Vitality™, and 1 drop Thyme Vitality™.

Vegan Stuffed Acorn Squash

INGREDIENTS

INSTRUCTIONS

Roasting the Squash 

  • Preheat oven to 450° F.

  • Cut off ends of squash and cut in half lengthwise.

  • Scoop out pulp and seeds.

  • Brush squash halves with ½ tablespoon olive oil.

  • Sprinkle with sea salt and black pepper.

  • Cover baking sheet with parchment paper.

  • Place squash sides face down on baking sheet

  • Bake for 25–35 minutes.

While Squash is Roasting 

  

  • Heat 1 tablespoon olive oil in a large skillet.

  • Saute celery, carrots, and onion for 5–7 minutes.

  • Add mushrooms and cook for 5 minutes.

  • Add Brussels sprouts and cook for 5 minutes.

  • Cook quinoa in vegetable stock until done

  • Combine quinoa, sautéed veggies, and wolfberries.

  • Combine 1 teaspoon olive oil with Vitality essential oils.

  • Pour over quinoa/veggie mixture and toss.

  • Salt and pepper to taste.

  • Fill each squash halve with mixture.

  • Bake for 10 minutes.

  • Let cool slightly; then dig in!

Baby Potatoes with Lemon Dill Sauce

INGREDIENTS

ROASTED POTATOES

  • 2 pounds small fingerling potatoes in assorted colors, well scrubbed
  • 1½ tablespoons extra virgin olive oil
  • ½ teaspoon sea salt
  • ¼ teaspoon freshly ground pepper
  • Zest of 1 lemon, divided
  • 2 tablespoons fresh dill, chopped

LEMON DILL SAUCE

  • ½ cup plain coconut or dairy yogurt
  • 1 tablespoon fresh dill, chopped
  • 1 tablespoon lemon juice
  • 1 tablespoon extra virgin olive oil
  • ¼ teaspoon sea salt
  • Pinch of freshly ground pepper
  • 2 drops Dill Vitality
  • 2 drops Lemon Vitality

INSTRUCTIONS

  • Preheat oven to 450° F.
  • Toss the potatoes with olive oil and salt and pepper on a rimmed baking sheet.
  • Roast for 20–30 minutes, tossing halfway through, until fork tender and browned.
  • Meanwhile, in a small bowl, whisk together sauce ingredients and set aside.
  • Toss the warm roasted potatoes in a large bowl with lemon zest and fresh chopped dill to coat. Serve with lemon dill sauce on the side.

For so many of us, the holidays are such a flurry of activity. Our calendars are filled with parties, dinners, gift-buying, school and church programs and so much more. One minute, we’re looking for that perfect present for the aunt we never know what to buy for and the next we’re pulling out those cookies from the oven that Pinterest told us would look cute.

It can be so easy to become overwhelmed and stressed during this season Sometimes the result of that is that we’re unable to really take in the beauty of what this season brings and be present with our families. Stress steals some of the joy from us.

That is also not to mention some of the very real emotions that the holiday season can bring up in us; whether it is the loss of a parent, or difficulties in close relationships or just the element of being drained by so much people time.

So, I’ve got a challenge for us, that this year will be different. Because this year we’re going to become intentional, we’re going to stay in truth and we’re going to keep our peace. I wonder how that will change how we see, how we show up and what we receive from these busy, holiday weeks.

I’ve come up with five ideas of things to try this holiday season to relieve some of that stress and overwhelm and keep your peace. Let’s dig in.

 

Connect with your heart.

By checking in on yourself and feeling out what you need, you’ll be able to stay connected and present. Also, if you’re having things rise in your heart because of all the family-time, give yourself some space to process that. Take a few minutes to journal or pray. Don’t push it down. That won’t help you.


Put down the phone.

We all get how fun and automatic the scroll can be. Looking through everyone’s life and seeing all those pretty photos; it can really get us out of our lives into someone else’s. There’s nothing wrong with that on it’s own, but if it’s giving you stress, because it’s causing you to compare or receive more pressure on yourself, then it’s not worth it.

Put your phone down and get in your life. Hug the people you love. Try a new holiday tradition. Give your time or energy to a cause or an event. Handwrite some cards.


Celebrate the good.

The more we celebrate and exercise gratitude of something, the more we see of it. It just happens. It’s like it multiplies right in front of our eyes or maybe we just become so much better at noticing.

So, take a moment, every single day, to see the good. Notice a good thing that happened in your day.  Notice something that added beauty to your life or made your heart lift. Notice what is amazing in the person sitting beside you. Extra points if you tell them about it!

Here’s the thing. If it costs you your peace, then it’s too expensive. Set into motion intentions and rhythms that help you to stay connected and enjoy this amazing season!

 

Set boundaries.

Think about what is really important for you during this holiday season. What are your priorities? There will be different priorities for different people. This isn’t universal. For example, time with your kids could be really important to one, but to a person who doesn’t have kids, maybe volunteering matters to them.

Use the answer to that question to determine how you’re going to set your boundaries. How can you protect your time and energy to make that priority gets the attention it needs? Maybe you don’t say yes to everything or maybe you don’t attend every party. Find what makes sense for you.


Diffuse some oils.

Some of us are more addicted to the diffusing than others, but if you get intentional about diffusing oils in your home consistently, you’ll notice a difference. You can use different oils to increase your energy, calm down, get focused, and be more present.

Lately, I am really into oil blends from Young Living’s The Feelings Kit. One oil that’s been really helpful for me is Present Time to get into the right-now moments of life.

Cinnamon Apple Chips

 INGREDIENTS

  • 3 apples
  • 1/4 cup honey
  • 1 drop Cinnamon Bark Vitality

DIRECTIONS

  • Preheat oven to 225⁰ F.
  • Use Thieves® Fruit & Veggie Spray to clean the fruit and thinly slice apples.
  • In a small bowl, combine honey and Cinnamon Bark Vitality
  • Line two cookie sheets with parchment paper and place apple slices on top.
  • Drizzle honey mixture over apple slices.
  • Cook in the oven for 90 minutes.
  • Remove cookies sheets from heat and place apple slices on cooling rack. - For best results, store apple chips in an airtight container and eat them within 24 hours.

Maple Spiced Popcorn

INGREDIENTS

  • 1 cup non-GMO popcorn kernels
  • 1/4 cup unrefined coconut oil
  • 1/4 cup pure maple syrup
  • 5-6 drops Thieves Vitality Oil
  • 2-3 drops Cinnamon Bark Vitality Oil
  • Ground cinnamon to taste
  • Salt to taste

** Omit maple syrup and just use coconut and essential oils for a sugar free treat!
 

DIRECTIONS

  • Air pop the popcorn and place in a large mixing bowl.
  • Melt the coconut oil in a saucepan.
  • Remove from heat and stir in the maple syrup and essential oils.
  • Pour maple syrup mixture over the popcorn, cover bowl and shake to mix.
  • Sprinkle with ground cinnamon and a touch of salt. Enjoy!

Burchfield Bone Broth Recipe

Start with a skinless whole organic chicken and place it in pot with enough water to cover the chicken.

For flavor, add celery, carrots, garlic and onions and herbs of choice into the pot with the chicken.

Simmer the chicken and veggies 4-5 hours on medium heat if you're using a stove top, or 30-40 minutes if you're using a Instant Pot.

Once it's been cooking for 4-5 hours, you can take the chicken out and pull the meat off the bones and use the meat for another meal.

Then add the bones back and let it slow cook for another couple hours for the broth to soak up even more flavor and minerals from the bones.

When you're ready, strain the broth to help remove any leftover pieces of bone, skin, or foam.

**Handy tip—don't forget sometimes a bag of "giblets" is stuffed into the chicken carcass. Remove it first before cooking. 

Citrus Fresh Guacamole Recipe

INGREDIENTS

  • 2 avocados
  • 2 drops Citrus Fresh™ Vitality
  • 1 drop Lime Vitality
  • 1 tablespoon fresh lime juice
  • 1 clove garlic, minced
  • 2 tablespoons chopped red onion
  • 1–2 Roma tomatoes, seeded and diced
  • 1-2 Green Chiles
  • 1 tablespoon chopped cilantro
  • Pinch salt
  • Pinch black pepper
  • Pinch of sugar


INSTRUCTIONS

  • Remove pit from Avocados, remove pits and mash flesh in mixing bowl with a fork
  • Add all other ingredients and stir until mixed
  • Garnish with cilantro
  • Enjoy as a side in your fun gatherings with friends and family!

Homemade DIY Aroma Play Dough Recipe For Kids Made With Essential Oils

INGREDIENTS

  • 2 cups flour
  • 1 cup salt
  • 2 teaspoons cream of tartar
  • 1 tablespoon oil
  • 2 cups cold water
  • Several drops of any essential oil
  • Food coloring, optional


DIRECTIONS

  • Mix flour, salt, cream of tartar, oil, and water in a medium saucepan
     
  • Stir over medium heat for about 5 minutes, until play dough has reached the right consistency.
     
  • Let cool, split into 3 balls, and knead in essential oils and optional food coloring until it is
    distributed evenly throughout each ball of playdough
     
  • Store in airtight container.
